Mac and Cheese GF
Our recipe for Gluten-Free Mac and Cheese is a creamy, cheesy comfort dish made with tender gluten-free pasta coated in a rich cheddar and Parmesan sauce. Thickened with gluten-free flour, this homemade mac and cheese is just as indulgent as the classic version. Served with steamed broccoli on the side or mixed in, it’s a delicious and satisfying meal for all ages!

2 tbs Gluten-Free Flour
1 lb Gluten-Free Penne or Macaroni
Fridge and Freezer
½ cup Parmesan
2 cups Milk
3 tbs Butter
1 8-oz bag Cheddar Cheese
1 lb Frozen Broccoli
Directions
Wash hands with soap and water. Cook the pasta in salted water according to package instructions. Microwave 2 cups of milk for 1 minute until it is slightly warm.
Meanwhile, make the sauce. In a skillet or pot over medium-high heat, melt 3 tbs butter. Whisk in the flour, season with salt and pepper, and cook for 2-3 minutes. While whisking, slowly drizzle in the milk. Continue to whisk until smooth until all the milk has been added.
Bring the sauce to a boil, then reduce the heat to low, and cook, stirring, for 2 to 3 more minutes. Stir in cheddar and parmesan, stirring constantly until all of the cheese has melted into the sauce.
Microwave broccoli according to package directions. Season with salt and pepper if desired.
Remove the sauce from the heat and stir in the cooked pasta. Season to taste with more salt and pepper if needed. Divide into 8 portions with steamed broccoli on the side or stirred in. This recipe makes 8 servings. Refrigerate leftovers within 2 hours.
