Microwave Bread Pudding

6 slices Whole Grain Bread
1 cup Brown Sugar
1 cup Raisins
2 tsp Cinnamon
½ tsp Salt

2 tbs Butter
6 Eggs
2 ½ cups Milk
Directions
Wash hands with soap and water. Butter the bread and cut into small cubes. Combine buttered and cubed bread, brown sugar, raisins, cinnamon and salt in a one-quart microwave safe dish.
In a microwave safe bowl or measuring cup, blend together 6 eggs and 2 ½ cups of milk. Heat the milk and egg mixture on HIGH for 2 to 3 minutes until hot, but not boiling. Pour over the bread mixture and lightly stir together.
Microwave the dish uncovered at 50% power for 5 to 8 minutes, or until edges are firm and the center is almost set. Let rest for 10 minutes before serving. This recipe makes 6 servings, about 1 cup each. Refrigerate leftovers within 2 hours.
