Microwave Veggie Omelette

Pantry

  • 4 slices Whole Wheat Bread

  • 1 Tomato

Fridge and Freezer

  • 8 Eggs

  • 1 cup Cheddar Cheese

  • ½ cup Milk

  • 1 Bell Pepper

  • 2 Green Onions

  • ¼ cup Butter

Directions
  1. Wash hands with soap and water. Wash the produce. Seed and chop the bell pepper. Discard the root ends of the green onions and chop. Chop the tomato.

  2. Lightly grease the inside of 4 12-ounce microwave-safe mugs.

  3. Use a fork to combine 2 eggs and 2 tbs of milk in each mug, season with salt and pepper, and stir well. Mix in the vegetables and cheese.

  4. Microwave on HIGH for 45 seconds. Stir. Return to the microwave and cook on HIGH until the mixture has puffed and set, 60 to 90 seconds. The omelet may look wet on the top but it will dry as it cools.

  5. Toast and butter 4 slices of bread to serve on the side. This recipe makes 4 omelets. Refrigerate leftovers within 2 hours.

*Omit toast or use gluten-free bread to make this recipe gluten-free.
