Mongolian Beef and Green Beans
Our Mongolian Beef and Green Beans is a takeout favorite made easy at home. Savory ground beef simmers in a sweet-salty ginger-garlic sauce, paired with crisp-tender green beans and a crunchy peanut topping, all served over fluffy rice.

2 cups White Rice
1 Onion
¼ cup Peanuts
1 tbs Cornstarch
2 tbs Soy Sauce or Coconut Aminos
2 tbs Brown Sugar
Fridge and Freezer
12 oz Green Beans
1 tbs minced Ginger
1 tbs minced Garlic
1 lb Ground Beef, thawed
Directions
Wash hands with soap and water. Wash and dry green beans. Discard brown or limp beans and stems. Peel and slice the onion.
Cook the rice with a rice cooker or the video.
Heat a little oil in a large skillet over medium-high heat. Add the green beans and onion and cook until browned. Remove to a bowl and return the skillet to the heat.
In the skillet, cook the ground beef, breaking up with a spatula, until browned. Add the ginger and garlic and cook until fragrant, 1-2 minutes. Add ¼ cup water, the soy sauce (or coconut aminos for gluten and soy free), and brown sugar. Cook and stir until thickened.
Divide the rice into 6 bowls and serve topped with green beans, beef, and peanuts (optional). This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
*Omit peanuts to make this recipe peanut-free.
*Replace soy sauce with ¼ cup coconut aminos to make this recipe soy and gluten-free.
