1 cup Old Fashioned Rolled Oats
2 Bananas
Fridge and Freezer
1 cup Cottage Cheese
4 Eggs
½ cup Peanut Butter (or alternative)
Directions
Wash hands with soap and water. Heat and grease a large pancake griddle to medium heat.
In a blender, combine 1 cup oats, 1 cup cottage cheese, and 4 eggs.
Add the batter in 2 tbs portions and cook 2-3 minutes, or until edges are set. Flip and cook 1-2 minutes more.
Spread each pancake with nut butter and roll up. Serve 4 pancakes per portion, with a half banana on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
