Overnight French Toast Casserole

This Overnight French Toast Casserole is a warm, comforting breakfast bake with minimal morning prep. Made with rich brioche, sweet apples, and a creamy custard, it’s topped with buttery streusel for a deliciously crisp finish. Prep it the night before and just pop it in the oven for an easy, make-ahead breakfast.

Ingredients

Pantry

  • 1 loaf Brioche Bread

  • 2 Apples

  • ½ cup White Sugar

  • 1 cup Brown Sugar

  • 2 tsp Vanilla

  • 1 tbs Cinnamon

  • ¾ cup Flour

Fridge and Freezer

  • 8 Eggs

  • 2 cups Milk

  • ½ cup Cream

  • ½ cup Butter

Directions
  1. Wash hands with soap and water. Grease a 9×13 inch casserole dish using oil or cooking spray. Tear the loaves of French bread into bite-size chunks.

  2. In a bowl, combine ¾ cup brown sugar, the flour, and 1 tsp cinnamon. Cut in the butter using two butter knives or clean fingers until the mixture resembles coarse crumbs. Put this streusel in an airtight container in the refrigerator for tomorrow.

  3. Dice apples into chunks. Combine the bread chunks and chopped apples and lay in an even layer in the bottom of the dish.

  4. In a bowl, combine the cream, white sugar, ¼ cup brown sugar, milk, eggs, vanilla and 2 tsp cinnamon. Pour this mixture over the bread.

  5. Cover the casserole with a lid or foil and store in the fridge overnight.

  6. When ready to bake the casserole, preheat the oven to 350°F. Remove the lid or foil and bake the casserole for about 35-40 minutes.

  7. Remove the casserole from the oven and crumble the streusel over the top. Continue baking the casserole for about 5 minutes, or until the streusel is melted over the top.

  8. Cut into 12 equal portions and serve. Cover leftovers and store in the fridge within 2 hours.
