Pizza Soup
This Pizza Soup is a cozy, low-carb twist on everyone’s favorite comfort food, packed with the bold flavors of Italian sausage, pepperoni, and classic pizza veggies like bell pepper, mushrooms, and zucchini.

1 jar Pizza Sauce
1 15-oz can Diced Tomatoes
1 Onion
1 Bell Pepper
1 tbs Italian Seasoning
Fridge and Freezer
1 lb Ground Italian Turkey Sausage, thawed
1 Zucchini
8 oz sliced Mushrooms
1 6-oz bag Pepperoni
Directions
Wash hands with soap and water. Wash the bell pepper and zucchini. Chop the zucchini, peel and chop the onion, seed and chop the bell pepper.
Add a little bit of cooking oil to a large pot over medium heat. Add the sausage to the skillet. Stir for about 15 min to crumble the sausage and cook all the way through. Add the chopped veggies and the mushrooms and saute them for about 10 min, or until the veggies are translucent.
Add 3 cups of water, the pizza sauce, the diced tomatoes and their juices, pepperoni, and the Italian seasoning, then choose one of the following cooking options:
SLOW-COOKER INSTRUCTIONS: Add ingredients to a slow-cooker and cook on low for 6-8 hours or high for 2-4 hours, then skip to step 6.
STOVETOP INSTRUCTIONS: Bring soup to a boil, then reduce to a simmer for 20 minutes.
Divide the soup into 6 equal servings and serve. Refrigerate leftovers within 2 hours.
*Use turkey pepperoni to make this recipe pork-free.
