Pork Fried Rice

Ingredients

Pantry

  • ¼ cup Soy Sauce (or coconut aminos)

  • 2 cups White Rice

Fridge and Freezer

  • 8 oz Diced Ham

  • 1 bag Frozen Stir-Fry Vegetables

  • 1 bunch Green Onions

  • 4 Eggs

Directions
  1. Wash hands with soap and water. Cook the rice using a rice cooker or the video. Wash and dry the green onions, then chop them, discarding the root ends and separating the white bottoms and green tops. Break the eggs into a small bowl and beat with a fork.

  2. In a large skillet over medium-high heat, sauté ham and white bottoms of the green onions in a little oil until just lightly browned. Add frozen stir-fry vegetables. Sauté until tender, stirring frequently.

  3. Push the rice to the side and pour the eggs into the empty space. Stir around to scramble until almost cooked, then stir the rice into the eggs.

  4. Stir in cooked rice and soy sauce, breaking up any clumps of rice. Continue to heat and stir until heated through. Divide into 4 servings, about 2 cups each, and top with green onion. Refrigerate leftovers within 2 hours.

*Replace soy sauce with ¼ cup coconut aminos to make this recipe soy and gluten free.
