Ingredients

Pantry

  • 3 Tomatoes

  • 6 Pitas

  • 1 Lemon

  • 1 tbs Olive Oil

  • 1 tbs Red Wine Vinegar

  • 1 tbs Greek Spice Blend

  • ¼ Red Onion

Fridge and Freezer

  • 1 tbs minced Garlic

  • 2 Cucumbers

  • 1 cup Plain Nonfat Greek Yogurt

  • 1 1-lb package Diced Pork Loin, thawed

  • 1 2-lb bag Frozen French Fries

Directions
  1. Wash hands with soap and water. Wash and dry the produce. Thinly slice half a red onion. Dice the tomatoes. Peel, seed and slice the cucumbers. Combine all in a bowl with the vinegar and olive oil and season with salt and pepper.

  2. Bake the French fries according to package instructions.

  3. Zest the lemon, then cut in half. In a small bowl, combine the yogurt, garlic, lemon zest, and enough of the lemon juice to make a drizzling consistency.

  4. Heat a little oil in a large skillet over medium-high heat. Pat the pork dry with paper towels and season with Greek spice blend and salt and pepper. Always wash hands before and after handling raw meat. Add the pork to the pan and cook, stirring occasionally, until browned and cooked through.

  5. Warm the pitas in a toaster oven or until the broiler in the oven (oven temperatures vary so watch carefully to avoid burning).

  6. Fill the pitas with pork, salad, and drizzle with the sauce. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
