Pulled Pork Tacos with Peach Salsa

8 Corn Tortillas
1 Lime
2 Peaches
1 15-oz can Corn
Fridge and Freezer
1 lb BBQ Pulled Pork
1 bunch Green Onions
½ cup Cotija Cheese (optional)
Directions
Wash hands with soap and water. Wash and dry the produce. Halve the lime. Slice the green onions, discarding the roots and separating the white bottoms from the green tops. Open and drain the can of corn.
Dice the peaches and combine in a bowl with the tops of the green onions, half the juice of the lime, and season with salt and pepper. In another bowl, combine corn, cotija (if using), white bottoms of the green onions, and the rest of the lime juice.
To heat corn tortillas, you can use a dry skillet or pan over medium-high heat, heating each side for 10-20 seconds until soft and warm, or you can use a microwave with damp paper towels.
Heat the pork according to package instructions. Serve tortillas topped with pulled pork, corn, and peach salsa. This recipe makes 8 tacos; 1 serving = 2 tacos. Refrigerate leftovers within 2 hours.
