2 single-serving cups Applesauce
1 cup Canned Pumpkin
1 ½ cups Whole Wheat Flour
1 ⅓ cups Flour
2 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
1 tsp Pumpkin Spice
¾ cup Brown Sugar
¾ cup White Sugar

Directions
Wash hands with soap and water. Grease a loaf pan. Preheat the oven to 350 degrees.
In a medium mixing bowl, combine the flours, baking powder, baking soda, salt, and pumpkin spice.
In a large mixing bowl, combine 2 single-serving cups of applesauce, 1 cup pumpkin (store the rest in a sealed, labeled container in the fridge for later use) the sugars, and eggs. Stir in the dry ingredients and mix well.
Pour into the loaf pan and spread to the corners. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool for 10 minutes before removing from the pan. Cut into 8 slices, each serving is 2 slices. To store leftovers: wrap in plastic or foil to store for several days or freeze for up to a month.
