Ingredients

Pantry

  • 1 Lemon

  • ¼ Red Onion

  • ½ cup Breadcrumbs

Fridge and Freezer

  • 1 head Broccoli

  • ½ cup Parmesan Cheese

  • 25 oz Frozen Cheese Ravioli

  • ¼ cup Cream

  • ¼ cup Butter

  • 4 Chicken Sausages

Directions
  1. Wash hands with soap and water. Preheat the oven to 450 degrees and grease a large baking sheet. Wash and dry the produce. Chop the red onion. Halve the lemon.

  2. Cook the ravioli according to package instructions. Reserve ¼ cup of the pasta water before draining.

  3. Remove the broccoli florets and discard the stem. Spread the broccoli on the baking sheet and season with salt and pepper. Melt 2 tbs butter in a small bowl in the microwave for 30 seconds.

  4. Toss the butter with the cheesy breadcrumbs and sprinkle over the broccoli. Roast the broccoli in the oven for 10-15 minutes until tender and lightly browned.

  5. Heat the other 2 tbs butter in a large skillet over medium heat. Cook, without stirring, until butter turns golden and smells nutty.

  6. Add the red onion and cook for 1 minute. Add the cream and ¼ of the pasta water and season with salt and pepper. Bring to a simmer.

  7. Squeeze the lemon juice over the top of the broccoli. Add the ravioli to the sauce and stir until the sauce thickens and coats the pasta.

  8. Serve pasta and sauce with broccoli on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
