Red Chili Beef

1 Onion
2 cups White Rice
4 Flour Tortillas (optional)
1 tbs Southwest Spice Blend
2 15-oz cans Broth
Fridge and Freezer
1 tbs minced Garlic
1 bunch Cilantro
1 Lime
1 bunch Radishes
1 lb Stir Fry Beef, thawed
Directions
Wash hands with soap and water. Wash and dry the produce. Peel and chop the onion. Remove the stems and chop the cilantro. Halve the lime. Slice the radishes.
Heat a little oil in a large skillet over medium-high heat. Cook the onion until tender and starting to brown. Stir in the spice blend and the broth. Add the beef and bring to a bowl over high heat. Reduce heat to medium-low, cover, and simmer.
Cook rice using a rice maker or the video instructions. When rice is cooked, stir in juice of the lime, a handful of cilantro, and season with salt.
Divide rice and chili beef into 4 bowls. Top with cilantro, if desired, and the sliced radishes and serve with tortillas (omit tortillas for gluten-free) on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
