Ingredients

Pantry

  • 2 cups White Rice

  • 1 Onion

  • 1 Lime

  • 1 tbs Chili Powder

  • 1 15-oz can Broth

  • 1 15-oz can Refried Beans

Fridge and Freezer

  • 1 lb Pulled Pork

  • 1 bunch Radishes

Directions
  1. Wash hands with soap and water. Wash and dry the radishes. Cut off the ends and thinly slice. Peel and chop the onion. Wash and dry the lime, then cut in half.

  2. Cook the rice using a rice cooker or the video.

  3. Heat a little oil in a medium saucepan over medium-high heat. Cook the onion until it is just starting to brown. Stir in the chili powder and season with salt. Cook until fragrant.

  4. Add the 2 cans of broth to the onions and stir. Break the pulled pork apart and stir into onion mixture. Bring to a boil, then reduce to a simmer until heated through.

  5. Transfer the refried beans to a microwave-safe bowl, add ¼ cup water, and cover with plastic wrap. Microwave 1 minute at a time, stirring each time, until heated through and smooth.

  6. Serve rice and beans topped with pork and sauce, with corn on the side. Sprinkle with radishes and finish with a squeeze of lime juice. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
