Sausage Gravy and Home Fries
This Sausage Gravy and Home Fries recipe is a lighter, healthier version of a comfort food favorite, made with lean ground turkey breakfast sausage instead of traditional pork. Crispy roasted potatoes replace biscuits, it’s a hearty, satisfying meal that’s easy to adapt for various dietary needs.

1 tbs All Purpose Spice Blend
1 tsp Sage
1 tsp Fennel
2 tbs Flour
4 Russet Potatoes
Fridge and Freezer
3 cups Milk
1 lb Ground Turkey Breakfast Sausage, thawed
Directions
Wash hands with soap and water. Preheat the oven to 450. Grease a large baking sheet.
Scrub the potatoes well and cut into cubes. Toss the potatoes with a little oil and the spice blend. Spread onto the prepared baking sheet and bake until browned and tender.
Meanwhile, heat a little oil in a large skillet over medium-high heat. Cook the sausage until browned.
Stir in the sage, fennel and flour and stir to coat the sausage. Slowly stir in the milk, ½ cup at a time, cooking each time until thickened (you may not need all the milk). Season with salt and pepper.
Serve potatoes topped with sausage gravy. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
