Sheet Pan Pork Fajitas

These Sheet Pan Pork Fajitas are a quick and flavorful dinner featuring seasoned pork, bell peppers, and red onion roasted to perfection on a single pan. Finished under the broiler for a delicious char, they’re served in warm tortillas for an easy, crowd-pleasing meal.

Ingredients

Pantry

  • 1 Red Onion

  • 3 Bell Peppers

  • 1 packet Fajita Seasoning

  • 4 Flour Tortillas

Fridge and Freezer

  • 1 lb Pork loin, thawed

Directions
  1. Wash hands with soap and water. Preheat the oven to 400 degrees. Cover a baking sheet with foil and coat with cooking spray or oil.

  2. Wash bell peppers. Using a cutting board and sharp knife, peel and slice the red onion and slice the bell peppers.

  3. If the pork is not diced, cut into bite-size pieces using a clean cutting board and a sharp knife. Always wash hands before and after handling raw meat.

  4. Place pork and veggies in a single layer on a large baking sheet. Drizzle with a little oil. Sprinkle with seasoning. Toss to coat evenly. Bake for 10 minutes. Then stir meat and veggies on the pan and bake for 5 more minutes.

  5. Increase heat to broil for 2-3 minutes just to get the edges of everything crispy and a little charred. Serve on tortillas. Makes 4 fajitas. Refrigerate leftovers within 2 hours.

*Pork: the USDA recommends cooking pork to an internal temperature of 145 degrees.

*To make this recipe gluten-free, substitute gluten-free tortillas.
