Skillet Eggs with Chorizo
These Skillet Eggs with Chorizo are a bold and savory one-pan meal featuring spiced ground turkey chorizo, simmered tomatoes, and green chilies—all topped with perfectly cooked eggs and crumbled feta. Finished with a dollop of sour cream and fresh green onions.

1 4-oz can Mild Green Chilies
2 15-oz cans Diced Tomatoes
Fridge and Freezer
1 lb Ground Turkey Chorizo, thawed
1 tbs minced Garlic
1 4-oz container Feta
1 bunch Green Onions
1 cup Sour Cream
4 Eggs
Directions
Wash hands with soap and water. Dice the green onions.
Pour a little oil into a large skillet and set it over medium heat. Add the chorizo, breaking it into small pieces with a wooden spoon, and cook until it starts to brown. Add the chilies and cook for 1 minute.
Stir in the tomatoes and garlic, and increase the heat to high (the tomatoes should bubble). Leave the tomatoes to bubble and lose a bit of their moisture for about 5 minutes. Stir and season with salt and pepper to taste.
Make 4 wells in the mixture and crack an egg into each well. Leave them to cook gently until the whites are solid. Sprinkle the feta over the eggs.
Serve topped with sour cream and green onions. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
