Sloppy Joe Pie

1 cup Baking Mix
1 Onion
1 15-oz can Sloppy Joe Sauce
Fridge and Freezer
1 cup Milk
1 cup Cheddar Cheese
2 Eggs
1 lb Ground Beef, thawed
1 bag Frozen Peas and Carrots
Directions
Wash hands with soap and water. Preheat the oven to 400 degrees. Grease a 9-inch pan or pie plate. Peel and chop the onion.
Heat a large skillet over medium-high heat. Cook beef and onion over medium heat, stirring occasionally, until beef is browned. Drain fat into a heat-proof container, cool, then discard.
Stir in sloppy joe sauce, frozen peas and carrots (you can also cook these separately, if desired), and cheddar cheese and heat through. Spoon into the prepared baking dish.
In a medium bowl, combine 2 eggs, 1 cup milk, and the baking mix. Pour over the beef mixture.
Bake for about 30 minutes or until golden brown. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
