Sloppy Joes
Our Sloppy Joes are a hearty and veggie-packed twist on the classic sandwich, featuring savory ground beef, mushrooms, carrots, bell peppers, and onions simmered in a rich tomato and barbecue sauce. Served on toasted hamburger buns, this dish is both flavorful and satisfying, offering a delicious way to enjoy extra vegetables in every bite.

1 15-oz can Tomato Sauce
1 Onion
1 Bell Pepper
4 Hamburger Buns
1 15-oz can Diced Tomatoes
Fridge and Freezer
1 Carrot
1 lb Ground Beef, thawed
8 oz Mushrooms
¼ cup Barbecue Sauce
Directions
Wash hands with soap and water. Heat a saucepan over medium-high heat. Wash the vegetables. Peel and chop the carrot. Seed and chop the bell pepper. Peel and chop the onion.
Sauté veggies and ground beef in the saucepan for 5 minutes. Add tomato sauce, canned tomatoes, mushrooms and ¼ cup barbecue sauce. Bring to a boil. Reduce heat and simmer for 15 to 20 minutes or until thickened, stirring occasionally.
Toast buns if desired. Serve sloppy joes open-faced on buns. Makes 4 sandwiches. Refrigerate leftovers within 2 hours.
