Souvlaki and Salad

This Souvlaki and Salad recipe is a fresh, Mediterranean-inspired meal featuring seasoned ground beef served in warm pitas with a dollop of sour cream and a crisp veggie salad tossed in a herby vinaigrette.

Ingredients

Pantry

  • 1 can Kalamata Olives

  • 6 Pitas (optional)

  • 2 Tomatoes

  • 1 tbs Italian Seasoning

  • 2 tbs Red Wine Vinegar

Fridge and Freezer

  • 1 Cucumber

  • ½ cup Sour Cream (optional)

  • 1 bag Chopped Romaine

  • 1 lb Ground Beef, thawed

Directions
  1. Wash hands with soap and water. Open and drain the olives. Wash the produce. Chop the tomatoes and put them in a large bowl with the romaine. Peel and chop the cucumber and add to the bowl.

  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking up with a spatula, until browned and cooked through. Drain off any excess grease into a heat-proof container and discard.

  3. In a small bowl, combine ¼ cup oil, Italian seasoning, the red wine vinegar, and salt and pepper. Pour the dressing over the vegetables and top with olives.

  4. Skip this step for gluten-free. Heat the oven to broil. Place the pitas on a baking sheet and carefully bake them for about 1-3 minutes (individual broilers vary) until warm and golden.

  5. Serve pitas filled with ground beef and sour cream (omit for dairy-free) with salad on the side. If making gluten-free, serve as a salad without pitas. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.

*To make this recipe gluten-free, omit the pitas and serve ground beef and sour cream over the salad.
