Spiced Waffles and Berry Compote

A warm and aromatic twist on a breakfast classic, these Spiced Waffles are infused with cozy spices and served with a sweet, tangy berry compote. Ingredients

Pantry

  • 2 cups Baking Mix

  • 2 tbs Vegetable Oil

  • 1 tbs Pumpkin Spice

  • 1 tbs Cornstarch

Fridge and Freezer

  • 2 Eggs

  • 1 cup Milk (or alternative)

  • 2 cups Frozen Mixed Berries

  • 2 tbs Pancake Syrup

Directions
  1. Wash hands with soap and water. Place 2 cups frozen mixed berries and 2 tbs pancake syrup into a medium saucepan over medium heat. Stir constantly until the berries are thawed. In a small bowl, mix the cornstarch with 1 tbs of water and pour it into the saucepan. Heat until the sauce is thickened.

  2. In a medium bowl, combine the baking mix and pumpkin spice. Stir in the milk, oil and eggs until barely mixed but still lumpy.

  3. Heat up a waffle iron on high heat. Pour about ¼ of the batter into the waffle iron (depending on the size) and cook until golden brown, about 5 minutes depending on the waffle iron. Repeat for all waffles.

  4. Pour about ¼ of the berry sauce onto each waffle and serve. 1 serving = 1 waffle. Refrigerate leftovers within 2 hours.

*Use a milk alternative to make this recipe dairy-free.
