Spinach Feta Wraps
These Spinach Feta Wraps are a flavorful, veggie-packed meal featuring savory egg whites, wilted spinach, tangy sun-dried tomatoes, and creamy feta—all wrapped in a warm tortilla and baked until lightly crispy.

Ingredients

½ cup Sun Dried Tomatoes
4 Flour Tortillas
1 tbs Italian Seasoning
Fridge and Freezer
2 cups Spinach
1 pint Egg Whites
½ cup Feta
Directions
Wash hands with soap and water. Preheat the oven to 400 degrees. Chop the sun dried tomatoes.
Heat a little oil in a large skillet over medium-high heat. Cook the spinach until wilted. Stir in the sun dried tomatoes, Italian seasoning, and season with salt and pepper.
Shake egg white carton and pour over spinach. Sprinkle with feta. Stir a few times and allow to cook through.
Lay out corn tortillas on a clean surface and divide eggs between each one. Fold up each end and then roll up into burritos.
Place on the baking sheet and bake for 5-10 minutes, flipping halfway, or until desired crispiness. This recipe makes 4 wraps. Refrigerate leftovers within 2 hours.
