4 Russet Potatoes
Fridge and Freezer
1 1-lb package Sirloin Steaks, thawed
8 oz Mushrooms
6 tbs Butter (optional)
Directions
Wash hands with soap and water. Wash and dry produce.
Prick potatoes all over with a fork and microwave, 5 minutes at a time, until tender.
Meanwhile, season steak with salt and pepper. Heat a little oil in a skillet over medium-high heat and cook the steaks on each side to desired doneness, adding 2 tbs butter when they are almost done.
Remove the steaks to plates and keep warm. Return the skillet to the stove and saute the mushrooms, seasoning with salt and pepper, until browned. Spread on top of steaks.
Cut each baked potato open and serve alongside the steaks and mushrooms, topping each potato with 1 tbs butter (if desired) and seasoning with salt and pepper. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
*Replace butter with olive oil or butter alternative to make this recipe dairy-free.
