Ingredients
Pantry
1 Bell Pepper
1 jar Pizza Sauce
1 small can Sliced Black Olives
1 small can Mushrooms
¼ Red Onion
Fridge and Freezer
1 ball Pizza Dough (or gluten-free crust)
1 8-oz bag Mozzarella Cheese
1 6-oz bag Pepperoni
Directions
Wash hands with soap and water. Set the dough out to come to room temperature. Preheat the oven to 450 degrees. Grease a baking sheet or pizza pan.
Wash, seed and slice the bell pepper. Chop ¼ of a red onion, reserving the rest, wrapped, in the fridge for later use. Open and drain the cans of mushrooms and olives.
If using a gluten-free crust, follow package instructions. Otherwise, on a lightly floured clean surface, spread the pizza dough using your hands or a rolling pin into a 12-inch circle. Carefully move the crust to the prepared pan.
Top the crust with sauce, mozzarella, mushrooms, olives, bell pepper, and pepperoni. Sprinkle with parmesan. Bake the pizza on a baking sheet for about 10-20 minutes, or until the cheese is melted and starting to brown.
When pizza is done, cut into 8 pieces. Two pieces = 1 serving. The recipe makes 4 servings. Refrigerate leftovers within 2 hours.
