Sweet and Sour Meatballs

These Sweet and Sour Meatballs offer a delicious twist on a takeout favorite, made with lean ground turkey, juicy pineapple, and crisp snow peas. The homemade sweet and tangy sauce comes together quickly and coats tender meatballs served over fluffy white rice.

Ingredients

Pantry

  • 1 can Pineapple

  • 1 tbs Cornstarch

  • 2 tbs Brown Sugar

  • 1 tbs Soy Sauce (or coconut aminos)

  • ½ cup Breadcrumbs (optional)

  • 2 cups White Rice

Fridge and Freezer

  • ¼ cup Catsup

  • 1 tbs minced Garlic

  • 1 lb Ground Turkey, thawed

  • 1 bunch Green Onions

  • 1 Egg (optional)

  • 1 bag Snow Peas

Directions
  1. Wash hands with soap and water. Wash and dry the green onions, cut off the root ends and discard. Chop the green onions, separating the white bottoms and the green tops.

  2. Open the can of pineapple, reserve ½ cup of juice and drain the rest. In a medium bowl, combine reserved pineapple juice, cornstarch, brown sugar, 14 cup catsup, soy sauce (or coconut aminos for gluten-free), and garlic and mix well.

  3. Cook rice in a rice cooker, if you have one, or use the video.

  4. In a mixing bowl, combine ground turkey, breadcrumbs (omit for gluten-free), white bottoms of the green onions, 1 egg, and season with salt and pepper. Form into 1” meatballs (always wash hands before and after handling raw meat).

  5. While rice is cooking, heat a large skillet with a little oil over medium-high heat. Cook the meatballs until browned on all sides and cooked through, 12-14 minutes. Add the snow peas and the sauce. Cook until thicken, 2-4 minutes. Stir in the pineapple and heat through. Serve meatballs and sauce over rice, garnished with green onion. Makes 4 servings. Refrigerate leftovers within 2 hours.

*Omit breadcrumbs and replace soy sauce with coconut aminos to make this recipe soy and gluten free.

*Omit egg to make this recipe egg-free.
