Sweet or Savory Crepes
These Sweet or Savory Crepes are a versatile, crowd-pleasing option for breakfast, brunch, or even dinner. Made with a simple oat-based batter blended with yogurt, eggs, and milk, these crepes can be filled with your choice of sweet toppings like fresh berries and powdered sugar, or savory options like melty Swiss and Canadian bacon. With options to mix and match, they’re as fun to customize as they are to eat.

1 tsp Baking Powder
1 tsp Cinnamon
1 cup Old Fashioned Rolled Oats
¼ cup Powdered Sugar
Fridge and Freezer
2-3 oz (½ container) Honey Greek Yogurt
6 slices Canadian Bacon
6 slices Swiss Cheese
2 Eggs
1 basket Strawberries
1 ¼ cups Milk
Directions
Wash hands with soap and water. Wash and dry the strawberries, remove the stems and slice.
Heat a large skillet over medium-high heat and grease well.
Combine oats, baking powder and cinnamon, half a container of honey yogurt, the eggs, and 1 ¼ cups milk in a blender until smooth. Reserve the rest of the yogurt in a labeled, sealed container in the fridge for later use.
Use a ladle or ½ measuring cup to pour batter on a hot skillet and tilt the skillet around to allow the mixture to spread. Once the crepe sets, work your way around your edges with a spatula and make sure it's safe to flip. Flip and cook on the other side. Repeat with all batter (12 crepes).
You can make sweet crepes with berries and powdered sugar. For savory crepes, wrap up Canadian bacon and Swiss cheese in a hot crepe and allow to melt. Or try mixing and matching the sweet and savory toppings! This recipe makes 12 crepes. One serving is 2 crepes. Refrigerate leftovers within 2 hours.
