Sweet Potato Sausage Skillet
A hearty, one-pan breakfast featuring savory turkey sausage, tender sweet potatoes, and mushrooms with a hint of sweetness from fresh apple and a touch of sage. This wholesome skillet is easy to make and a satisfying breakfast.

Pantry
1 Onion
4 Sweet Potatoes
1 Apple
1 tsp Sage
Fridge and Freezer
8 oz container Mushrooms
1 lb Ground Turkey Breakfast Sausage, thawed
Directions
Wash hands with soap and water. Wash and dry the produce. Peel and chop the onion. Dice the apple. Peel and cube the sweet potatoes.
Heat a little oil in a large skillet over medium-high heat. Cook the sausage until browned. Remove to a bowl, cover and keep warm.
Return the skillet to heat and add a little more oil. Cook the onion until tender. Add the sweet potato, seasoning with sage and salt and pepper, and cook until tender.
Add the mushrooms and apple and cook until tender. Stir in the sausage.
Heat through and serve. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
