Vietnamese Shaking Beef
Our Vietnamese Shaking Beef is a flavorful stir-fry of tender beef, onions, and crisp snap peas in a tangy lime-soy sauce, served over white rice and topped with quick-pickled radishes. Inspired by the classic Vietnamese dish "Bò Lúc Lắc," it balances savory, sweet, and sour notes in a simple weeknight-friendly recipe.

2 cups White Rice
1 Onion
1 Lime
2 tbs Soy Sauce (or coconut aminos)
1 tbs Sugar
1 tbs White Wine Vinegar
Fridge and Freezer
1 bunch Radishes
1 1-lb package Stir-Fry Beef, thawed
1 bag Snap Peas
Directions
Wash hands with soap and water. Wash and dry the produce. Halve and juice the lime. Peel and slice the onion.
Cut the stem and root ends off the radishes, then slice thinly. Place the radishes in a medium bowl. In a small bowl, combine the white wine vinegar, 1 tsp sugar, and a pinch of salt. Pour over the radishes.
Cook the rice using video instructions or a rice cooker, if you have one.
Heat a little oil in a large skillet over medium-high heat. Add the beef and onion and season with salt and pepper. Cook until golden brown, stirring occasionally.
Add the snow peas to the skillet along with the soy sauce (or coconut aminos for gluten-free), juice of the lime, and 2 tbs water. Cook until sauce is slightly reduced and snow peas are bright green.
Serve rice topped with beef and vegetables. Sprinkle marinated radishes on top and drizzle with marinade, if desired. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
